I’m full of posty goodness today.

Soda bread recipe behind the cut tag, for Shannon and anybody else who wants it. (no! no! It’s JUST for Shannon! ahahahahaha!)

Brown Oatmeal Soda Bread

2 1/4 c white flour
2 c wheat flour
2 tsp baking soda
1 tsp baking powder
2 tsp salt
1 tbsp sugar
1 c oatmeal
2 c buttermilk
1 egg

Soak the oatmeal in the buttermilk while you mix the other ingredients together. Add the egg to it and beat it a bit.

Whisk the dry ingredients together. Pour in the wet ingredients and stir or knead until you have a sticky but manageable dough. Shape into 2 7″ round loaves or 1 larger loaf and bake for 40 minutes at 350 degrees on a greased cookie sheet.

Then revel in its goodness. :)

    I was informed that true IRISH soda bread does not contain eggs and only receives it’s leavening from baking SODA.

    *grin*

    (Actually, the oatmeal part sounds yummy… I’m going to have to try this! And I’m going to add honey instead of sugar… cause I’m just contrary that way ;-)

  2. I forgot the egg once. It worked just fine. :) I haven’t tried honey yet, though I did try brown sugar, which was a trifle less sweet and quite nice. Lemme know how it turns out!
